Smashwords pays you via Paypal. So if you have an account with them, just fill out your details. If not, create an account purely for selling books. Easy!
Amazon, for either CreateSpace or Kindle you will need a checking account or you get paid via cheque. Which, unfortunately, is bloody expensive when you get it and you have to get your bank to deal with it and it ends up costing you. Amazon does not pay via Paypal so you will need to set up an account.
If you are publishing with CreateSpace then you would have visited the forums, upon which you would have been in the international payments board. It's for everyone NOT in America and how they go about getting paid and what their experiences have been.
There is a company, Payoneer, who will help foreigners set up checking accounts with them so they can get paid via that. Many Aussies, amongst others, have done it and so have I.
There is someone in the forum you can contact and he will send you any relevant details and links to go to. You will need to fill out a simple form that is in three steps but it's not too hard. Make sure you put it in your real name if you publish under a non de plume (pen name).
He will send you an email along with the bank, and you just keep following the steps with his help. It took me about three days to get it all done, as with the time difference I had to wait for each section to be checked and issued.
In the end I got myself a checking account with this bank. They sent me a card for using and they sent an email with the bank name, routing number and account number which you can then use to go into your Amazon account and fill out in the payment section while waiting for your ITIN to come in.
I won't reveal any names for security reasons, but if you are with CreateSpace and are overseas, you will know who and what I'm talking about. If you're not, depending on which company you're using, you should have read their FAQS and in those would be how you can be paid.
As for any site you publish with, check their FAQS or send emails about payments. You need to know what you're getting into BEFORE you sign up and start publishing otherwise you'll end up with a whole mess of trouble.
